Rigged up the XL for some major searing, and holding pattern cooking.

Had a couple of nice filets and some el-cheapo cutlets that I used the salt thing on.

Stabilized the XL at 375 while the tators and bread were cooking. Oops, forgot about the bread. Plain ole recipe that I again messed up.

Anyway. Let em cook. Filets went on the indirect side to 110 then moved to the sear side. The cutlets just got tossed around until they were done.

I pulled mine(pictured) at 141 and hers at 135. I like filets a little bit more than rare. She just wants hers waved in front of a picture of a fire to call it done.
