It's perfect weather here. 42 with 85% humidty and sleet. Perfect fleece weather with my Elmer Fudd hat..

London broil fajitas with black beans, seasoned green beans and tators, cheese, sour cream, and toothpick jalapenos.

Traveling for the rest of the week so no more cooking for awhile.......

I like a mild chili marinade using guajillos. Buy them dried then steam them back to life and then roast some garlic until it is soft. Then blender them together with some ground cumin seed and black pepper corns with a little water and vinegar and salt. Spread the paste mixture over the meat and let sit for at least 4 hours then grill.

Or. Get the 'El Jalapeno' brand fajita seasoning and a little Moore's and use that.
 
Id eat that..looks gooood ! Did you grill the london broil ? Ive yet to do one Ive been happy with..

Yes sir I did. Marinaded it overnight in the seasoning and then hit it 6 minutes per side about 4 inches above the coals on the Primo. Let it rest for 10 minutes then thinly sliced it with an 8" Wustoff Santuko Chef knife. Across grain.

Sliced really thin across the grain it is tender enough to bite through in a tortilla without pulling all the meat out.
