Grilled Mahi-Mahi with wild rice

One of our favorite quick dishes is grilled Mahi-Mahi with wild rice. The fish is seasoned with olive oil and lemon pepper and then grilled over direct flame. The wild rice is a garden blend that take about 40 minutes in a heavy cast iron pan. Add steamed broccoli with butter, salt, pepper and a squeeze of lemon juice and it's ready to go.

The Guinness is for the cook (me)

On the grill.

Rice is finished after 40 minutes.

Time to eat.

Looks great. I'm not much of a grilled fish person but I sure could go for a plate of that.
