Everyone once in a while I get craving for navajo tacos so that's what we had.

Well that chow do look mighty good. It has triggered me to go into a feeding frenzy here in a bit.

Basically its just a scone with cheese, beans, meat, lettuce, tomato and hot sauce. Usually when I make these, I end up making them again soon. I think maybe this weekend I'll do a full rundown.

It's pretty much a Tostada. The tostadas I'm familiar with come on a crispy shell, and these are a fry bread that's the only difference though. In fact if you search navajo taco on Wikipedia it will direct you to fry bread.
