First up some onion buds for a little snack. Bacon on top and finished with a little shredded cheese. Some Slap ya Mama for seasoning. Dipping sauce was mayo with a little chipotle peppers in adobo sauce.

On the grill

Some sweet peppers and baby bella mushrooms tossed in a little canola oil and sea salt.

Eye of round on the rotisserie. Cut some plugs and added some garlic and whole black peppercorns that were smashed in a mortar and pestle and then seasoned with some Montreal steak seasoning

Roast done and resting, then ran it thru the slicer.

Toasted some bread, added some cheddar cheese.......

and made me a sandwich. Used some of the leftover mayo/chipotle for a spread. Boy was it good but my eyes were bigger than my stomach and couldn't finish the thing.

6 AM here John and I am craving that sandwich, looks great.

When I find the chipotle peppers in adobo sauce it is whole peppers, is there another prodouct that the peppers are not whole or do you dice the whole peppers?

I just toss them in my small food chopper, and give them a small whirl.

I run a couple of cans in a silver bullet and blend real well, strain it to get the seeds and skins out. Then I put the strained peppers in a ziplock bag and kind of form a log and then put it in the freezer. When I need some later I just shave off what I need. It freezes real for later use.

I just leave root end in tact on the onion, peel it and lay down a couple a couple of wooden spoons and put the onion between them and use them as a guide so I don't cut all the way through the onion.
