It was time to harvest some eggplants from my garden and the wife wanted to make grilled eggplant sandwiches. To go with this she made a fresh basil mayo sauce that was simply fantastic with these sandwiches.
It consisted of eggplant grilled with a coating of good olive oil and garlic salt, then when done add a slice of mozzarella cheese, grilled sliced onions, basil mayo,roasted red peppers, all on slightly grilled 12 grain bread and that's it. Simple and delicious!!

They were so good I had to have a second one. This was the first one that didn't take long to disappear.

A tomato from the garden that made a great sandwiich last night with just mayo salt and black pepper. One of my favorites!!

It's real coomplicated so pay close attention. Lol..... I had to make some more it was so good.

I used about 1/3 cup of chopped fresh basil to about 1 1/2 cups of mayo and mix together real well. There you go! I bet it will be great on a fresh tomato sandwich like I had last night. Try this stuff, it's really good!!!
