I found this idea online, & asked my buddie at Brewbachers grill to make it.
The idea is to put a mound of cheese on top the patty after the 1st flip, using a WELL seasoned griddle is a must. The cheese melts out onto the griddle making a semi crunchy & chewy crust. It was Damm good too.
I ate some of the cheese before the pic's  Link to the origanal:

looks good, I love crispy cheese

maybe you could put the cheese on a griddle in a grill ring ... Like McDs does (or used to) do the eggs in .... think of it as a cheese patty and the grill ring holds it together ... when it's ready to flip run a knife around the ring edge then flip and grill the other side

when assembling the burger put the crispy cheese patty on

JB, there was an episode on Triple D that did that exact same thing! Looks great!!

Saw a fella making a similar burger on Food TV one day. Think it was some famous burger joint on the Right Coast or in that general proximity. They was cooking on a flat griddle and put a big wad a cheese on top of the patty which was done or mostly so...then throw a few ice cubes near the patty and cover with a big dome lid till the chesse melted. Made the cheese run around and cook itself direct on the grill. Looked mighty tasty. Good job Boy!!
