Chicken Pesto Paninis and Red New Potato Chips

The title says it all...Here are the fixins.

Chicken cutlets on, oil for the chips coming up to temp, butter garlic and a little veg oil melting to brush the bread with and the grill pan pre-heating.

Chicken off (I had mine in panini form, Leigh-Ann and Campbell had theirs in salad/cut up into chunks form).

Great looking meal. Fried potatoes-great idea. What are you using for the bottom of your panini? I typically do my on my Weber Q, which has a thick cast iron grate and relatively low heat.

Nice lookin sammie Don. Red Robin rest makes a sandwich like that, but they use a parmigian sauce.

It's a enamel coated cast iron grill pan...not sure of the brand but probably came from Williams Sonoma.
 
This panini looks amazing! Why would you ever put chicken like that is a salad when you could have it in panini form?

@Oak I've made these on my Weber 220...it's a great grill for the price and portability.
