Cheesy Basil-Stuffed Chicken Breasts

Got this one from Cook's Country. Wanted to add a little smoke...Oh, and cook outside too so we adapted it for the grill.


Shredded mozzarella, basil, cream, lemon juice, garlic, and S&P stuffed into pockets cut into chicken breasts. Then coated with mayo and topped with bread crumbs and more garlic and surrounded with halved cherry tomatoes.

Cooked at 425* with a small olive wood chip packet for 35 minutes until an internal of 160* was achieved...I love my kettles, dialing in temps is pretty dag gone easy!

Very garlicy but not overpowering. Great meal. Thanks for looking!!
 
Looks great! My wife would also love to see me make some of that, but she knows what it would end up look'n like. :oops:

Yeah...like JIMMYJAM, Cook's Country/Cook's Illustrated/America's Test Kitchen is our favorite recipe source. Never had a bad meal from there.
 
Very impressive.....Wow. One of these days I hope to graduate to dishes like that.....
