I've been wanting to try carnitas for a while. Decided to make my father-in-law the guinea pig on this one for Father's Day.
Went with this recipe.

Out and cooling.
Broken into bite sized pieces...
...and back into the reduced fat.
Added some corn 20 minutes out.
Plated. Corn with mayo, grated parm & chili powder (Oaxacan style).
Best pork ever. I think I like it better than pulled pork...
