Carne Asada and Al Pastor Tacos

A couple of lbs of al pastor and a couple of lbs of flap steaks. Marinaded the steaks for about 6 hours in a home made marinade that still needs to be tweaked.
Al pastor cooking in my CI pan

Some green onions

Al pastor done and some of the carne asada.

Carne asada done then chopped

Plated. Two taquitos of each, green onions, refried beans, and some hot carrots.

Great job Vermin. Two of my favorites on the same plate! Way to go. The only thing better than green onions on the grill is garlic.

Are you willing to give up the two marinade recipes?

The al pastor was marinated at the Market I went to

The Carne Asada marinade still needs a little tweaking. Next time I'm gonna do 3 oranges and one lime. The lime juice was a little too dominant this time.

Carne Asada Marinade 8.21.10

Marinade:
Zest and juice of 2 limes
Zest and juice of 2 oranges
˝ bunch cilantro, chop stems and leaves
6-8 cloves garlic, crushed and chopped
one med yellow onion sliced pretty thin
3/8 cup of olive oil

2 lbs flap meat
Lightly sprinkle beef both sides with some asada seasoning.

marinated meat for approx 6 hours.

Re: Carne Asada and Al Pastor Tacos

I haven't seen Flap steak at the local grocery. Are Flank and Skirt similar?

Re: Carne Asada and Al Pastor Tacos

I believe flap, flank and skirt are all very similar. Any real thin sliced beef will work
