Well I made some chimichurri burgers with manchego cheese, grilled fries and some adult style vanilla roasted coconut shakes tonight and boy was it all good.

Vanilla Coconut Rum Shake
¼ cup milk
1/3 cup cream of coconut
About 15 oz. of vanilla ice cream
Splash of dark rum to taste (optional)
Shredded sweeten coconut (toast in pan on stove)

Combine the milk and cream of coconut in blender and pulse to mix, add the ice cream in and blend to smooth (scrap the sides down a time or two). Add the dark rum and pulse again.
Poor in glass and top with the toasted coconut.

NOTE: don’t mistake coconut milk or coconut cream for cream of coconut (it will not work at all)
For substitution: Simply get a can of sweeten condensed milk and add coconut extract to it. (This is the way we go most of the time).
Cream of Coconut can be found in most liquor stores

This shake is the bomb! I hope you enjoy as much as we did.
