Al Pastor Tacos

First cooked up some Mexican onions and chorizo. Some of the chorizo will be for some egg, bean and chorizo Sopes, tomorrows breakfast

Bought a couple of lbs of Al pastor at the Mexican Market


Frying up some corn tortillas for some hard tacos and some nopales in the background


Everything is ready


Plated up. Al pastor tacos garnished with some onion, cilantro, diced jalapeno, avocado and Panela cheese.
 
That looks amazing. I've never cooked nopales... can you explain how to prep ?

Very simple, remove needles or buy then already cleaned, brush or rub a little oil on them and grill them up until they soften up a little. When done add a little salt and enjoy. there is a salad that's really good too, but there are many variations, just google Nopoles or cactus salad. the prep is pretty much the same, it's the ingredients that are different.
