Made a batch of Wolfe Nuts today, modified the recipe some what boy are they good. Or you can use your favorite/any rub to make them.

2 CUPS DRY ROASTED, UNSALTED CASHEWS (if you can find unsalted)
2 TABLESPOONS REAL BUTTER
3 TABLESPOONS WOLFE RUB, or your favorite dry rub.

Preheat oven to 325. Put peanuts in bowl and microwave for 1 minute, stir and microwave for another 30 - 60 seconds till hot. Stir in melted butter till nuts are well coated. Add the rub and stir till coated. Spread them out on Non-Stick aluminun Foil and bake for 6 minutes. Remove from oven and let them cool if you can. So easy and so good.

Here's the version I did...
Full sheet pan with foil and a litte peanut oil.
4 cups of salted nuts that I shook the excess salt off in a seive.
add 4 tablespoons butter and nuke for 1.5mins, stir, nuke 1.5 min more.
Throw the buttered nuts on the pan and put it in the oven. roast at 300 till you can hear them hiss a little and keep turing so the don't brown on the bottom. Turn the oven off and leave the door ajar.
When they come out... for 4 cups of nuts I use about 4 tablespoons of Wolfe Rib ... mix very lightly...too much and the rub will clump. Put it back in the warm oven for another 15 or so. They come out and cool on a wire rack. When cool, I toss on another tablespoon of rub or so.
