Wittdogs Slam'n Salsa
1 Peck ripe Plum Tomatoes
12 Onions
6 Green Peppers
6 Small Hot Peppers
1 Tblsp Paprika
1 Tblsp Dark Chili Powder
1/2 Tblsp Pepper Flakes
1 Pint White Vinegar
3 Tbls Salt
1 Tblsp Ciliantro
2 tsp chipolte powder
Sugar to taste
Pinch of Onion and Garlic Powder

1. Skin and Quarter Tomatoes (Dip in Boiling water then Cold Wate
2. Chop Onions and Peppers (Use Sausage Stuffer)
3. Place Spices in a Cloth Bag and add to Veggies in a Large Pan
4. Cook until Veggies are tender.
5. Add Vinegar, Sugar and Salt.
6. Cook Until Mixture Thickens.
7. Pour in to Hot Sterilized jars and Seal.
I like to Roast the Peppers on the Grill Before I add them.
You can vary the Spices and Amounts per Taste
You can Also add Corn or Beans Between Steps 6 and 7

Above is the standard salsa recipe for peach salsa remove the skins from the peaches using the boiling water method….remove the pit form the peaches and chop…you want an amount of peaches equal to the peppers….it was about 8qts….Cut the sugar amount down to ¼ of a cup….and cook the peaches in the salsa along with the peppers, onions and tomatoes.
This is one of those recipes in which you have to taste as it’s cooking and make adjustments….you can alter the amount and type of peppers for your personal preference….
