Triple stuffed tators & then some
Bake 8 large tators,
Fry 1lb bacon
melt 1lb butter
chop 1 bunch green onions
sour cream about 1.5 cup start with 1 cup
cheese... the yellow kind grated
After fryin bacon reserve 1/2 the grease for later, in the other 1/2 of the grease
saute the geern onions till they are soft.
Cut baked tators in 1/2 & scoop out the inside leaving about 1/4in, in a bowel put the tator innards butter crumbled up bacon,
(YOU DIDN"T EAT ANY DID YA?)
1 cup shreded cheese, sour cream & the green onions & 1/2 of the grease
Mix it up, we want a consistancy ofthick mashed tators, not runny, not to dry,
Ajust with reserved bacon grease or sour cream if needed
stuff the tator shells evenly with the mixture cover with grated cheese
place in the oven till cheese almost starts to melt/.
This reheats well in yer nuke... but dont freeze em
You can stuff tators with anything you want . They had a joint called spuds & suds here a while back they had tators stuffed with shrimp & crab, ground meat onions & B peppers, BBQ chicken, steak tips n gravy,
veggies only, turkey, ham, Italian style with meat balls, hot sausage, & more. All the tators were huge & all came topped with either white or yellow grated cheese sour cream real bacon bits & they were almost floatin in butter. My favorite part was the had imported beers on tap.
