Grilled Polenta

1 can of chicken stock. I used the fat free stuff the wife had in the cabnet.
1/2 onion diced
1 tsp garlic
1 cup instant polenta, or corn meal works too.

bring chicken stock to a boil and add the onion and garlic. then add the polenta slowly while mixing. then remove from the heat and pour into a backing pan and spread it out. I sprayed cooking oil to keep it from sticking. Then I put wax paper on it and then put a glass cooking pan on top to flatten it. Let sit over night in fridge and then cut into squares and grill.
 
Mush is what we always called it until I learned that Polenta was just a fancy name for mush. :razz: Never grilled any though, seems like I would have trouble keeping it together without some sort of grill pan. ??
 
I use about a 3rd less liquid cuz I like my Polenta/mush to be thicker and sturdier. I also add some grated cheese and grill seasoning to the mush before patting it into the pan and fridging it. You can then cut it into squares, flour it, egg it , bread it and deep fry it. Top with another dusting of parmesan and some fresh chives - pure heaven.
