Got this idea from Raichlen's BBQ Bible: (all measurements are approximate - all these ingredients are to taste)
1 pineapple, make about 8-10 rings with it
1 stick of butter
1-2 tbsp. light brown sugar
1/2 - 1 tsp. lemon or lime juice
1/2 tsp. cinnamon
1 shot captain morgan or myer's dark rum
Melt the butter in a bowl (preferably a bowl that a pineapple ring will fit on the bottom) add sugar, cinnamon, juice and captain morgan. mix together.
dredge pineapple rings in mixture and place on hot oiled grill
cook about 6-8 min. per side
take them off the grill and sprinkle some cinnamon sugar on them (you could maybe add some nutmeg if you wanted)
eat and enjoy....
I liked this 'cause from an uncut pineapple to completion was less than 30 min. I would also try this with peaches or pears or plums....
Bet it would be tasty on a pork chop....
