Nothing fancy, but I make it all the time because I usually have the stuff, and it's super fast.

1 1/2 pounds Red potatoes cubed
3 or 5 slices bacon
Small red onion diced
4-5 tablespoons white-wine vinegar
3 tablespoons whole-grain Dijon mustard
4 Green onions sliced
Salt and Pepper

Slice up the bacon and cook until crispy and set aside. Cook the potatoes until tender, drain and add the vinegar, mustard and onions.

Well as my old pal Wayne Newton would say in the gutteral Germanic language..Dunka Shane. Got it copied. Cept..I only eat Texas style mustart tater salad. Never the less I will keep the recipe handy for any furriner frauleins who might pop by from the da Fadderland. Thanks.
