I had some leftover pulled pork and I made these last week. They were good and yummy.

24 rice paper rounds
(Soaked for a couple of minutes in warm water)
1/2 lb smoked pulled pork
4 green onions finely sliced
6-10 mushrooms (use your favorite either dried or fresh) finely diced
1/4 cup finely shredded carrot
1 tablespoon fresh ginger finely shredded or julienned
1/4 tsp fresh ground pepper
1 cup beansprouts


For the sauce
1/2 cup hoisin sauce
4 cloves of roasted garlic smashed well
1 tsp chili powder
2 tablespoons soy sauce
1 tsp rice wine vinegar

Combine all of the ingredients in a bowl.
When the wrapper looks soft and transparent, place about 1 teaspoon- tablespoon of filling near the curved side, in the shape of a rectangle. Fold the sides over to enclose the filling and continue to roll.

Fry them in peanut oil for really nice and crispy rolls. They can be steamed in a bamboo steamer as well. I just prefer the deep fry method


For the sauce combine all of the ingredients into a sauce pan and bring to a simmer for about 20 minutes. Serve drizzzled over the spring rolls.
