Smitty was an gray headed black gentleman who cooked bbq in Robstown, Texas. First met him in the real early 70's. Took about 5 years to pry him loose from his sauce recipe. There is a chain of black owned bbq joints in Little Rock which is using the same stuff and getting some good reviews. I think they use apple juice for the juice ration. Smitty always used grapefruit juice which distingushed his sauce from the way the other soul brothers made it. Gave it a slightly bitter twang. Its a real simple thin sauce and designed to be served on the side. Here tis:

Smitty's BBQ Sauce

1 large jug ketchup
1 small jug Lea n Perrins Wooster Sauce
2 T. granulated garlic
2 T. chili powder
1 T. granulated onyawn
1 small can grapefruit juice (or the juice of your choice..apple is good)
2 t. cayenne
1 large ketchup jug full of water

Pour it all into a non-reactive pot and stick it in a coolish part of the pit without a lid. Let it chuckle away all day.

Seems like the big jug of ketchup in my icebox say around 46 ozs. Small bottle of wooster prob about 6-8 ozs or thereabouts. Think it be smaller than a can o beer i.e. 12 ozs. Just add it till it taste about right might be a good plan. You might like mo wooster in there.
