Last night I googled for jerk recipes that have all of the ingredients listed on Walkerswood, and found one that was close in ingredient list and in the order of ingredients. With a few alterations, I think I have a pretty good copycat recipe:
2 bunches finely chopped scallions
2 cloves garlic
1-2 Scotch bonnet peppers
2 Tbsp salt
2 Tbsp ground Jamaican pimento (allspice)
1 Tbsp light brown sugar
1 Tbsp lime juice
2 tsp dried thyme leaves
1 tsp ground nutmeg
1 tsp ground black pepper
1/2 tsp cinnamon
Mix ingredients together with a food processor until smooth. Refrigerate for a couple hours before using.
I used 1 habanero instead of 1-2 scotch bonnets and it turned out very very spicy.
