Yeah Interesting. I bake low and finish with a high broil. But that's just me. Looks good John....for an appetizer...What's the main course?

I deep fry mine till crisp then toss them in some melted butter and hot sauce.

Get them going with lard at a high temp till they're about cooked inside then remove lid, lower temp, and crisp the skin.
