Picked up a couple of chuck roasts last Sunday to use for sauce from Walmart. I gotta say the one I used was probably the tenderest (sp?) and most flavorfull Ive ever had. Ill be smoking the other one soon... Cooked up the scraps from the one I used for sauce in the bacon drippings from this months bacon of the month for lunch and drizzaled a bit of sauce from my Secret Santa on the scraps...good eats !

cut 'em up and fried them in a screaming hot pan with some bacon drippings..
 
You had me at frying in bacon drippings! Yeah, I'd tear that up. Thanks for sharing. My heart actually just gave a shutter thinking about it. :LOL:
 
JP, that looked really good. But Cap'n I'm not sure beef tips come off a chuck. The couple of restaurants around here that serve tips say they are tenderloin trimmings. Personally, I don't know.
