I baked the potatoes and let them cool then cut them in half long ways , then scooped out the potatoe but left a 1/4 inch of potatoe . then i cut them in half long ways again.. brushed a little EVOO on them and roasted them in the oven for about 20 mins then sprinkled some mozerella and cheddar cheese and then the green onion 's and crunched up bacon
