This recipe from another site sounded interesting.
Sweet Potatoes with Cinnamon Streusel topping
Preheat oven to 375 degrees
Ingredients
2 40 oz can of yams (sweet potatoes)
3/4 cup (11/2 sticks) unsalted butter, at room temperature
3/4 cup light brown sugar
3/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup toasted pecan pieces
1 cup miniature marshmallows
In a saucepan cook sweet potatoes until heated through, about 10-12 minutes. Drain, put into a 9 by 13 pan. Next, mix butter, brown sugar and flour together until crumbly looking. Add cinnamon, salt, pecans and marshmallows. Mix together. Spread topping on top of the sweet potatoes. Put in oven and bake for about 20 minutes or until topping is browned and bubbly.
Two 40 ounce cans of yams is a lot of yams, I did ¼ of the recipe.
Served it with sliced pork tenderloin and field peas with snaps & onions.
