Sweet Potato Cake & Pecan Glaze

I made this last night and I'm taking it to a Christmas party today. I hope it's good. I archived the recipe over in the recipe section of this forum.

  • 2 c. flour[/*:m:9xnihvdu]
  • 3 tsp. baking powder[/*:m:9xnihvdu]
  • 1/2 tsp. salt[/*:m:9xnihvdu]
  • 2 tsp. cinnamon[/*:m:9xnihvdu]
  • 1 1/2 c. sweet potatoes, cooked, mashed[/*:m:9xnihvdu]
  • 1 1/2 c. sugar[/*:m:9xnihvdu]
  • 1 1/2 c. vegetable oil[/*:m:9xnihvdu]
  • 3 eggs[/*:m:9xnihvdu]
  • 2 tsp. vanilla extract[/*:m:9xnihvdu]

Mix together the flour, baking powder, salt and cinnimon. Set aside.
Mix together the sugar. oil, eggs and vanilla. Mix in with the flour mixture.
Add the sweet potatoes and mix well. Pour into a greased and floured
9 x 13-inch pan. Bake at 350º for 55 minutes.



Pecan Glaze Topping:

  • 1 c. evaporated milk[/*:m:9xnihvdu]
  • 1 c. sugar[/*:m:9xnihvdu]
  • 1 stick butter[/*:m:9xnihvdu]
  • 2 tsp. vanilla extract[/*:m:9xnihvdu]
  • 1 c. chopped pecans[/*:m:9xnihvdu]

Cook all ingredients over medium heat in a saucepan until thick.
Remove from heat and stir in vanilla and pecans. Pour over cooled cake.
