I used this seasoning I got for Christmas from Brian J. It's The Dizzy Pig, "Swamp Venom".. Blackend a batch of Pompano and boy it was good...!!!!
Ingredients:
- Pomano Fillets[/*:m:1230bazc]
- Butter melted[/*:m:1230bazc]
- Lemon halves[/*:m:1230bazc]
- Blackening Seasoning - Swamp Venom from http://www.dizzypigbbq.com
Cooking Insructions
[/*:m:1230bazc] - Cook outdoors due the amount of smoke created from the butter.[/*:m:1230bazc]
- Use a gas burner to get a cast iron frying pan as hot as you can get it.[/*:m:1230bazc]
- Take the fillets and coat with melted butter.[/*:m:1230bazc]
- Sprinkle some Blackening seasoning on the fillets. ( Use whatever you like- must have hot pepper in it)[/*:m:1230bazc]
- Lay the fillets in the pan and take a few spoonfulls of butter and drip on the pan to create a small fire.[/*:m:1230bazc]
- Take a lemon half and squeeze onto the fish to create more flames.[/*:m:1230bazc]
- Flip over and do the same to the other side.[/*:m:1230bazc]
- Cooks in less than 3 minutes per side. [/*:m:1230bazc]
