made reuben dip, served with bagel chips

here it is with everything but the sauce added on top








loving some stuffed peppadews....stuffed em with pepperoni and
feta (good), cooked italian sausage (meh), and cajun crab dip
(big hit)



fried wontons, stuffed with cajun crab dip and cream cheese with onions.



bought a sweet and sour sauce and doctored it up for the wontons.

good comments. I'm gonna play with the peppadews and beef...I think
they'd match up great in a fajita kind of thing.

I'll leave off the comments on the lazy eggrollie looking wontons if the rueben thing is good. .... ... Oh crap.

damn guys, I think I got the reuben dip recipe here in the apps section.
It's easy...

kraut in a dish, cover with corned beef, then swiss, and finally the
thousand island on top. Serve with stiff chips like bagel chips, it's a
hearty dip.

The wontons/small eggrolls are also easy. I bought some cajun crab dip
and some cream cheese with onions and whatnot, laid the wrappers out,
put in a dollop of whatnot, rolled up and sealed the edges with a little
beaten egg, fried till brown. Bought a sweet and sour sauce and doctored it up with chinese mustard and tabasco, served as a dipping sauce. Easy, but people loved em. I've been getting into eggrolls and wonton thingys lately....love my deep fryer.
 
Here are a couple to look at.

Reuben Dip

1/2 cup mayonnaise
1/2 cup Thousand Island dressing
16 ounces sauerkraut, rinsed and squeezed dry
8 ounces shredded corned beef
16 ounces shredded Swiss cheese

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small bowl, combine mayonnaise and dressing.
3. Spread sauerkraut into a 9x13-inch baking dish. Layer corned beef, Swiss cheese, and the mayonnaise-dressing mixture on top of the sauerkraut.
4. Bake for 20 to 25 minutes.

Use with rye crackers. Maybe use some of those little dried rye bread crackers to dip with. Or Rye bread toasted cut into smaller pieces. Or served it with rye triscits. Or I will just put it all into a large bun or loaf of some nice crusty bread.
 
Reuben Dip 2

1 lb chopped corned beef
1 lb sauerkraut, drained and chopped
12 oz Swiss cheese, shredded
12 oz cheddar cheese, shredded
2 c Thousand Island dressing
1 loaf small squares rye bread

Shred and chop corned beef. Add drained chopped up sauerkraut and add the Swiss cheese. Add the cheddar cheese. Then add the Thousand Island dressing. Mix all ingredients in glass cooking dish. Bake uncovered at 350 for ½ hour or until cheese melts some. Serve on rye squares.

BBQ needs to revisit SOTB this year. The Shriners now
cook a free breakfast for us, including all you can eat
fried fatback!
