Smoked Cheese and Almonds

Finally broke out the Smoke Pistol I bought a while back and gave her a try today.

The cheese.

Getting the smoke pistol started.

Gutted the WSM and put the cheese and some kosher salt on the bottom rack. If you look real close you can see the smoke at the bottom of the WSM. Since there is no heat the smoke just kind of sets there and doesn't rise.

Also got some almonds.

Tossed the almonds in some buttered and some kosher salt, granulated garlic and some ground chipotle chile powder that was ground in a coffee grinder

2.5 hours later at 275* and the almonds are done. tossed them in a little more of the salt mixture.

Cheese and salt done after 2.5 hours too.

John, I see some major problems with this smoke! You better send me all of those products so I can dispose of them for you! ;) Great job!
 
I haven't tried any cheese yet. I was going to wait a few days but burgers are on the menu tonight so I'll probably try some on them.
