Raw Shrimp Salad - Ceviche

It really isn't raw since the lemon juice cooks the shrimps. Just take some shrimp and butter fly them and take the poop out. soak them in lemon or lime juice with Chile pepper and garlic. Eat like that or serve on a tostada with tomato-aguacate or whatever you like...

I love Ceviche with a couple of Tecates. Yours is a little different than what I am used to but still looks outstanding.

Ceviche Rocks. Rick Bayless has a recipe with fruit in it that is extra special, thats for sure. I love seafood done this way. Reminds me of being much farther south than I am right now. Most excellent!
