We were trying to figure out what to do with the leftover chicken from Friday night and an idea popped into my head, quesadillas. We loaded up tortillas with cheese, chicken and peperoncini’s then placed another tortilla on top. I then got out the old George Forman, sprayed it down with some nonstick spray and cooked em for 5mins. They aren’t much to look at and I’m sorry for the crappy pics but they tasted darn good. Next time I’ll try sautéed onions and fresh peppers.

On the George Forman with my improvised drip pan, I lost the original.

It's hard to beat a quesadilla made from leftovers and improvised! I hope you put some sour cream and salsa on it!?!
