Pork Cube Steaks

Had my butcher run some boneless center cut pork chops threw his cube machine. He thought I was crazy. (till he took a few home to try out) I talked to him today and he told me they were great. I have had them in the past,and I think they are crazy good!

How's it different from regular center cuts grilled over indirect heat if cooked to the correct temperature? Is it a texture thing or what?

I like them just to throw them in the cast iron pan for a quick dinner when the weather is crappy out. Don't live in California ya know Lew.

Would be great as a chicken fried like cubed beef....gonna have to try that. Gotta love nice thick country gravy.
