Omelets for me and the little one

I have one more day of vacation, then it's back to the low fat diet and work.... :roll:

Whipped up a couple omelets for me and my daughter while my wife is out shopping. Each omelet consisted of 3 jumbo eggs, diced ham, red bell pepper, red onion, cherry tomatoes from the garden, garlic, oregano and mexi blend cheese. (wish I had mushrooms). I topped mine with lots of siracha and my clone dosed hers with Franks....I cannot believe it but this child (7 yrs old) loves hot sauce and ate the entire 3 egg omelet! :shock:

Larry you oughta make some cajun pickled eggs. Super easy too, Sterilize a maison jar
Boil some med. size eggs,
peel em, put in the jar & cover with hot sauce.
seal & refrigerate for at least 2 weeks
