Yesterday a good friend and fellow volunteer firemen with me passed away. He was at work and had a massive heart attack and was gone. Please remember him in your prayers. He was also scheduled to cook a dinner at the firehouse next Saturday for about 80 people. I got the call last night to put the dinner on. Dinner is gonna be filet mignon with shrimp cocktail as an appitizer. They are doing a Texas theme and asked for something "Texas" for the cocktail hour. I'm gonna do chili, brisket, baked beans. I'm looking for a few more suggestions.
 
geez, so much bad news lately...I just went to the funeral of an 18 year
old girl I used to babysit on Wednesday. Sorry to hear that Nick.
 
Don't do "baked" beans, do some pintos for a real Tejas treat. I just buy the GFS canned pintos and sautee some onions and green peppers with ham hocks, pour in the beans, a couple cans of Rotels, salt, pepper, oregano and cook down until you have "gravy." Cut the side meat up and return to the pot. MMMMMMMMMM
