The recipes will be forthcoming as soon as I can get my wife to cough up her sausage & gravy. After seeing her do it over the
years I know it's very easy, but???

I get a roll of Bob Evan's breakfast sausage(white wrapper) you can use Jimmy Dean also but it's too fatty for me. Fry till no longer pink. Add 4 TBS of butter, 1/2 of a stick (no margarine here folks) and 3 rounded TBS. flour to sausage in the pan.Countinue to cook sausage, butter and flour for at least 5 minutes stirring the whole time so flour does not burn. Add milk till desired consistancy is reached. add a generous amount of fresh ground pepper and some cayenne just for a little zip. serve over biscuits,english muffins or toast. Some times i make home fries and pile it on top of them. I was taught how to make this from a very nice man from NC quite a few years ago. This is the #1 request from my wife. Enjoy

This recipe comes from a poster at on another forum, I do not have any Rice Wine Vinegar so I went online to seek a substitute, you can use Cider Vinegar with a pinch of sugar. Other modifications were ½ cup of vinegar, chopped tomatoes, and red onion as well as the white. It went over very well, many positive comments.


Black Bean Salad

2 14oz cans of black beans, drained well
1 Cup Frozen or fresh white corn
1 10 oz can of Mandarin Oranges, drained
1/2 White onion, minced
1 Serrano Chile, minced (or more)
1/2 Red Bell Pepper, chopped fine

Dressing:

1/3 Cup Orange Juice
1/4 Cup Light Olive Oil
1/4 Cup Rice Wine Vinegar
1/4 Cup Chopped Cilantro
1/2 Teaspoon Dijon Mustard

My Wife’s Sausage Gravy for two, adjust accordingly.

Brown ½ roll of Jimmy Dean Hot sausage, set aside.

On medium heat - 2 tbl cooking oil in skillet, add 2 tbl of Flour

Stir constantly until browned – Do not burn.

Slowly add milk, keep stirring.

When thickened add sausage, stir well.

S&P to taste

Brian’s recipe with butter sounds better to me, maybe I’ll sneak some in when she asks me to do the stirring. :)
