Met Wittdog Today - BBQ Central

Met Wittdog Today

I got to meet Wittdog today at his home in West Seneca. Met his boys, Dave and Michael too. And, Magic, his black lab. Had a great time! He cooked up some eggs and polish sausage in some big-ass rolls, onion and plain. Good stuff !! Went out and met Buford and his Kingsford pit. What a nice setting ~ 2 pits sitting side by side, a couple Adirondack chairs and a hammock sitting around an enclosed firepit, all shaded, overlooking his football field of a back yard. Nice place to hang out in the summer for sure. Then we went to Schwabl’s for lunch ~ One of the best Beef-of-Weck restaurants in the country and Wittdog treated! Thanks Wittdog, that was some goood beef on weck! =P~ Got back to his place and the kids took a nap while we got a chance to chat for a while. I left with a few samples of sausage, bacon and a couple others. Thank you so much Wittdog! It was a good day to meet a fellow que’r and a new friend.

I had a good day visiting with Joker. My wife who was at work thought is was great that there was an adult at home with the boys for a change. Joker was being very gracious the boys were in their show and tell mode, my 92 lb lab almost decided to be a lap dog a couple of times. But all in all we did manage to talk some Q and he brought his guru over so that I could check it out. Scwabl’s is the place we went for lunch it has been in business since 1887. They serve a pretty tasty Beef on Weck and have Draft Birch Beer. I did manage to partly fill up the small cooler he brought with him.

Glad you guys had a nice get together, but I have to ask what is Beef On Weck?

Is this a regional dish? Any pictures or descriptions would be appreciated.

Hope to see you guys at Oinktoberfest this year!

A Beef on Week, is roast beef on a roll that has caraway seeds and kosher salt on top. It is a regional dish and I will look for pics.

A Beef on Week, is roast beef on a roll that has caraway seeds and kosher salt on top. It is a regional dish and I will look for pics.

I picked the Jedmaster on Saturday. It was a lot larger than I had anticipated. The top of the unit (smokestacks) tops out at 8'ft 3" in height.
The trailer is about 20 ft in length and about 8 1/2 ft wide. To make a long story short, there is no way this will fit descretely in my yard without the homeowners association raising hell! I left it at my friends house while I find a storage unit for it. Found one yesterday and I'll be bringing it home next weekend. Cooked 6 racks of ribs and a bunch of chicken on it Sunday. The ribs came out great! The jedmaster cooks directly over coals but has a heat shield to stop flare ups and ash from getting on the meat. The exterior of the ribs had a great carmelized exterior while the interior was tender and juicy. The rotisserie has a battery backup (6 hour life) and the battery automatically recharges when the rotisserie is hooked up to an electrical outlet. Storage unit top slides out and serves as another tabletop. All racks are stainless steel and I have two fold down stainless steel worktables built into the trailer. I'll post some pictures soon.

Looking forward to the upcoming competition season. It kind of sucks that it doesn't start up here until July. I am also entering the Ribberfest contest in Indiana and will be checking out the Kentucky contests as well.

Hey I left you a post on the Klose site. Thought for a minute that you had lost it and was posting under Dave H and answering under Woodman. I finally realized that it must be another Dave H when Dave H 2 came along.

My trailer is 2' longer than the one in the picture and is all black. It also has a black rhino type no slip surface on the floor of the trailer. Plenty of room to do all the prep work on the trailer.
