Thanks for the site, very informative.

If darker = better maple tatse (at least thats what the site said) then what do the grades indicate?

Im supposing grade A Dark is the best?

The grades are subjective.

The Medium or Dark Amber is what I usually send out ...better for cooking, it has more maple flavor, but not as robust as Grade B.

The Fancy has a more subtle taste, and is what us natives usually use on pancakes, and we keep that to ourselves.

A friend of mine who lives out near Attica was President of the NY Association a few years ago, and was instrumental in growing Maple Weekend from just Wyoming County to the whole state
