Made me some salsa

This will be a short post.
So I decided to make some salsa. Got a quarter bushel of tomatoes.
Here is what I added!

Onions, lots of onions

Green, red, orange, and yellow bell peppers.

20 Jalapenos

10 Serrano. The people around here are real sissies, so I could not put any more hot peppers in this, like I would have liked too.

Garlic, about 50 cloves

Three hand fulls of Cilantro

Tomatoes after peeling.

Tomatoes after dicing.

WE HAVE SALSA!!!! This is after 18 hours of simmering.

I got 20 quarts of salsa, wish it was spicier. Next year it will be.

Looks delicious. Re the spicy, I'm in the same boat. Anytime I make something like chili or jambalaya I have to split the pot and make two batches. One with, one without.

The people here like "ZERO" spice. Which actually kinda pisses me off. When i want to make something like orange chicken with minimal heat, they all complain "oh it's so hot" "how do you expect anyone to eat this". In this case, I really dont think anyone would eat this salsa anyway.
