I have been cooking for years and I have no problem allowing my BBQ to be blind judged. I have a catering company that is active, I cook whole hog on regular basis.

This what I hear based on your post "I can't produce good product with Kingsford or gas so somehow those products are inferior".

Kingsford allows me to produce product that is superior to the comercial product I find and makes me someone you have to deal with while competing.

Gas when you learn how to produce smoke while using it will produce great product.

Burning down forests to produce coals is tradional but very wasteful and I know not needed to produce the best product.

The techniques I use are learned from cooking with some of the best cooks across the country, Georgia, Tn, Al, Tx, and Kansas City. These folks use lump charcoal, Kingsford, some burn wood to coals, what I do know is that when you get these cooks together anyone of them can have the best product on any given day.

I have or do cook on WSMs, ceramic cookers, Traegers, Klose, weber kettles, brick pits, a TN hog cooker, and FE 100, great Q can be produced on all those pits using different fuels.

The idea that is Kingsford can't produce great Q speaks to the cook not the fuel, same for gas. This my opinion of course.

Sounds like according to Jim's post... Cappie should have thrown out the cook... not the cooker.

Nope Chris you are wrong, Cappy never said he made an inferior product on gas, LudiChris did! Cappy was just unable to make crispy skin, the meat was good, at least I think he said it was!
