KP's French Toast with Apples

Today's cook was almost a sacrilege as it is a no meat recipe. I do a killer breakfast sausage casserole, but I have a son and he and his wife have become vegetarians. They live in Oregon so I do not see them often, but this casserole works well when I do cook for them. Where he got this vegetarian thing I don't know ... not from me. I call this KP's French Toast with Apples, KP is my sister and I stole this from her.

1 loaf French Bread or Baguette -- Slice into 1 1/2" slices
8 Egg
3 cup Milk
3/4 cup Sugar -- 1/4 cup and 1/2 cup
1 tbsp Vanilla Extract
5 Granny Smith Apples -- Peeled, cored, sliced thin
2 tsp Cinnamon, Ground
2 tbsp Butter

Preheat oven to 400 degrees
Spray 13 X 9 baking pan with non-stick cooking spray.
Cut bread into 1 ½ inch slices and layer in the pan.
In a mixing bowl, beat eggs lightly, beat in milk, ¼ cup sugar and vanilla.
Pour half of the egg mixture over the bread.
Mix the rest of the sugar (1/2 cup) with cinnamon.
Peel, core, and slice apples. Mix about ½ of the sugar mix into the apples. Arrange apples over bread.
Pour the rest of the egg mixture over the apples. Sprinkle the rest of the sugar mix over apples. Dot the apples with butter.
Bake for 35-45 minutes until eggs are cooked.

As always the toughest part ... getting it all together.



Bread ready, eggs ready ... on to slicing apples.



Ready for the oven.



Had to taste test before I serve it to the family.



Tomorrow back to real food... My first try at beef ribs.
