Great job jb, when's the last time you were there. It was 2005 for me, great out of the way non-touristy type place.

Before Katrina that summer... BTW all this is a one person serving @ TJ's about 1.5lbs of food :shock: & yeah I ate the whole plate :LOL:
 
Looks really good and filling...Were those peppers hot? That's one heck of an omellete Bubba! :shock:
 
Nope SS sweet peppers They got em at wal mart. Looking back I think a salsa & hot sauce on tortellias would be good with this too. more cheese wouldn't hurt, maybe sour cream too
 
I serve my omelets with a scoop of sour cream on the side...a lot
of funny looks, but they end up liking it. Also, omelets should be cooked
slowly, gives you more marriage of flavor and gives you a better shot
at perfectly cooking the eggs without browning them....I hate browned eggs!
