Italian beef recipe wanted

I've found a couple of sites on Italian beef with good sounding recipes, but thought I'd check you guys to see if someone has a killer recipe I should try before I just pick one out. Thanks

I've got a couple, if you don't mind I'll just post them in the Beef section of the Recipe part of the board.
 
I don't have any receipes but I did watch a new show (new for me at least) on the Travel Channel called Man v. Food starring Adam Richman.
He reminded me of a cross between Guy Fieri and Kevin James and he takes on food challenges from restaurants across the U.S. His Chicago show featured an episode on Italian Beef from a place called Al's Beef. Looked like the beef was cooked until about fall apart tender and then stored for a day at temps under 40 degrees but above freezing so that they could slice it paper thin the next day. It basically sat in an au jus until served. It looked really good. The show is great but could be deemed offensive by some as seen on their chatroom on their website.
