It's done open pit, direct over coals with no water pan. I use wood with lump.

I think BBQ is a term for a recipe than a style of cooking.
Grilling/brioling = High temp cooking, over 400
BBQ = cooking over a fire from, 225 to 400
smoking = cooking with hot smoke, 195 to 235
cold smoking = cooking with cold smoke, below 150

BBQ Shaken Not Stirred
He who don't cook, better not complain

Yes beer qualifies as an appetizer

Well if there is a difference betwixt slow grilling and direct cooking of bbq I ain't discovered it yet. Offset pits with separate fireboxes was born when folks was trying to find a use for all the large diameter pipe piled up down around the Jouston Ship Channel after the big TX oil field bust. Food cooked in them thangs do not actually qualify as bbq.
