I got a call the other week from a chef in Charleston wanting some sauce. I was working down there and went by to see him Saturday night. We swapped sauce for supper. I came out WWAAYYYYY ahead. Food was awesome. The name of the place is The Glass Onion. Some of you older folks might remember a Beatles song by that name Shocked .
It took a long time to decide what to eat, it all sounded good, kind of a southern soul food meets Nawlins. Everything is cooked to order by a real chef! We tried several things> The tea brined pork chop was awesome. They smoke it then finish on the grill. Collards were fresh, cooked with a smoked ham hock and seasoned perfect. Shells and chez, well you just wouldnt believe. Fresh cut fries double fried extra crispy with a side of Bechamel sauce, great as a starter or a meal. Trigger fish and grits, outstanding.
This is gettin long so Ill slow down. If you are ever in Charleston look them up, ask for Chris, and tell him swampsauce sent you!
