Yep, my brother-in-law is a commercial fisherman. He catches around a 100,000 pounds of salmon and 25,000 pounds of halibut every year. Every year in August I get a call stating that he has filled his halibut quota and going to work on his home pack, and then he asks how many pounds I need.

I gotta try that pappilotte technique.
