Gumbo

As the weather is starting to change, I am getting in the mood for some gumbo.

I ran across this video and I have to say it looks very good. I plan on making this today of maybe this weekend.

The recipe and advice looks solid.

I used to watch Justin Wilson all the time I loved listening and watching him on the TV , and that was before I started cooking anything. Now J B's it!

I too used to watch Justin all the time.

Shrimp can be & should be used instead of chicken it the above okra recipe, Some restaurants use chicken instead of seafood due to cost.

I'd go with Justin too, but I will say I was pleasantly surprised that skeeter, scooter, whatever his damn name was, actually took the time to make a chocolate roux. Most folks wouldn't... and thats the only way to get the color and flavor needed. IMHO.

I made it up last night. I had my 11 year old do all the hard work. Peel the shrimp. Stir the roux. She was hating it and I was loving it. She got tired of stirring and wanted to chop some stuff so I let her take the ends off of the okra.

The roux could have been darker but it was getting late. I added Tony's creole seasoning at the end and that brought it up to a more respectable level IMO.

Godd stuff.
