Grilling on the WSM - BBQ Central

Grilling on the WSM

Anyone use there WSM as a grill? The wife decided to "CLEAN" my gasser and it started falling apart. Have to order new parts for it so I all I have is the WSM for now. If you use it as a grill, how?

Remove the mid section and place the top grate on the charcoal ring.

Go easy on the charcoal. About one layer of Kingsford Mesquite works well for half fast grilling split chickens on the top rack without a waterpan. My old pal Big Dave has cooked many a grand prize winner using that system. He claims it put it at about 300 at grate level. I tried it using Ozark Oak one time and got the temps up a little too high. Sorta got it overdone overquick.
