The first batch is cooked in a "discada" South Texas style. The second batch is cooked in a "Jamabalaya Crackling Pot" Cajun Style....









 
Yuck :!: I'll cracklins But I eatin no hog casing unless its stuffed with boudin. Even then I suck the filling out the casing & trow it away

You seem to use the heck out of your discada - may have to get me one. Looks like it could double as a bird bath when not cooking. :D :D BD
