File` powder is hard if not impossible to find outside of La. Its made from dried then ground sasaffras tree leaves. They have a special flavor just like bay leaves have there own special flavor. You can use okra but it will tast different

Thanks for the heads up JB. I googled File powder and found it at [url="http://www.thespicehouse.com"]http://www.thespicehouse.com[/url] in glass jar or resealable bags. One cup shaker jar for $5.78 and 4 oz. bag for $5.69. Sounds like I might be in business. I'm going to review your video again to see how much I'll need.

Well I aint neva found the stuff that hard to find. Far as I know every grocery store in town has it or at least they did the last time I went looking for some..which has been many moons ago so maybe now they dont have it. I will looks in the spice section of few stores tomorrow and repoat back on that angle. Apparently it aint illegal for a product labled Gumbo File or vice versa to contain other stuff in additiion to the sassafrass leaves. I know this cuz I got some. It comes from the Farmer Brothers Coffee Company and has all kinds of added spices in it including tea and is apparently designed to be used early in the cooking process or at least is in the recipe I use which is the only which I know of which calls for the stuff. I think it must be some type of standardized recipe peddled to restaurants that serve Gumbo. Just guessing of course.

Smokey Lew, 4oz will be enough for 10 or 12 cups of rice, Use about 1/2 tsp per cup of cooked rice. I done at least 5 gumbo videos, You may want to watch the others that have all the steps included. Sarge file`is avalible in the states that surround La.

Roux is mean stuff huh Ron.. I got some battle scars too
